Gazpacho Recipe - Vegetarian

Gazpacho Andaluz Simple and refreshing cold soup from southern Spain made with fresh vegetables. Great to serve as a starter / tapas, especially such as chorizo, olives, cured ham or bread with olive oil. 2 Vegetarian Soup Ideas

Vegetarian soup can be just as flavorful as a meat or fish soup but many people are unaware of this and assume that vegetable soup is supposed to taste plain and boring. There also seems to be a popular consensus that all vegetarian soups are for dieters and this is also untrue. Actually, there are plenty of vegetarian soup ideas that you can use to make the most delicious soup recipes.

You can make creamy vegetable soups or add homemade croutons or plenty of cheese. It is a myth that meatless and fishless soups have to be healthy and you can use cream, cheese, nuts or croutons to add flavor, crunch, or creaminess.

If you want to follow a meat or fish recipe but omit the meat or fish, you can substitute eggs, tofu, or a grain like barley or rice, depending on the soup recipe. It is probably easier to follow a few vegetarian soup recipes to begin with and then you can start to create your own. Use plenty of delicious herbs and spices to give maximum taste to the soup.

Vegetarian French Onion Soup

If you are looking for a rich, satisfying vegetarian soup, what about making a vegetarian version of French onion soup? Classic French onion soup is made with beef broth but you can use vegetable broth instead, for a tasty soup.

The flavor of the soup will not be exactly the same as in the classic French onion soup recipe but if you love onions and you want to make a vegetarian onion soup, this is a good way of doing it. You can also substitute vegetarian cheese for the Gruyere cheese, as a tasty topping for this warming dish.

Chinese Hot and Sour Soup

Hot and sour soup is great as an appetizer or even as a meal. In Taiwan and China, this would be enjoyed for breakfast but you will probably prefer it for lunch or dinner. This is a wonderful way to make a full-flavored vegetarian soup. This is a vegan recipe as well as a vegetarian one. If you like, you can add some seitan or fried tofu.

What you will need:



1 small can water chestnuts
6 cups vegetable broth
2 cups sliced mushrooms (try shiitake or wood ear mushrooms)
2 tablespoons chili oil
1/2 cup sliced green onions
2 tablespoons vinegar
3 minced cloves garlic
1 small can bamboo shoots
1/2 teaspoon black pepper
2 tablespoons soy sauce
1 teaspoon hot sauce

How to make it:

Bring the vegetable broth to a simmer and add the water chestnuts, mushrooms, vinegar, garlic, bamboo shoots, black pepper, soy sauce, and hot sauce. Simmer the soup for half an hour, then add the green onions and simmer it for five more minutes. Stir in the chili oil and add extra vinegar, soy sauce, or hot sauce to taste.

I'm A Vegetarian Now

My semi-autobiographical greatest "hit" about becoming a vegetarian. Vegetarian Food Party Planning Ideas

As a vegetarian, you almost certainly already know the disappointment involved in trying to find good food to eat at any parties you go to. You most likely usually offer to bring something for the host so that you know there'll be at lesat ONE thing at the party that you can eat. This year, why not take matters into your own hands and host your own New Year's Eve party - with vegetarian food all around. There are tons of wonderful vegetarian dishes to choose from. You could even prepare cards labeling some of your more exotic dishes on the buffet ( this is particularly beneficial for ethnic foods ) so people know what they are going to be eating. As a party favor, you could print a little recipe book or recipe cards with instructions on how to prepare a couple of your favorite dishes. ( Who knows, maybe they'll make it the next time they invite you over to their house!

Though some salad munchers, particularly those that eat vegetarian for health reasons, rather than moral or environmental reasons may opt to prepare meat-based dishes to serve along side vegetarian foods, many salad munchers do not like cooking beef and will decide to test their guests with a new and various menu of vegetarian party foods.

Another nice perk of serving vegetarian food is that it can be less expensive. Though, if you go hell for leather for fresh berries and fruit ( which isn't in season around New Year's Eve ) or a large amount of fancy wines and cheeses, your party may not be too cost-effective. One way to cut back on the cost of the party is to substitute hearty vegetarian dishes in the place of the more expensive beef dishes. If properly prepared, most guests won't even miss the presence of the meat. Heavy soups that are familiar to meat-eaters ( like bean chili, black bean soup, or split pea soup ) are a great choice as the tastes and appearance are familiar and the tastes mix together well even without the addition of burger or ham. When selecting these recipes, it is critical to follow each recipe punctiliously and not make any substitutions. This is important because items you may substitute into the recipes may contain animal products. Making these substitutions will result in your dishes not being totally vegetarian.

Alternately an alternative way to offer a various vegetarian menu is to make the event a potluck. However, if almost all of the guests are not salad munchers, they may have difficulty deciding what to bring and might also inadvertently include ingredients with animal products in the food. In this example, suggest what you'd like your guests to bring -'Jim, you're making a mean guacamole, would you mind whipping that up and bring it along with some salsa and chips?', 'Erin, I loved that hummus and pita bread you served last summer... Would you mind bringing that along to share?'

Another important thing to remember when planning a vegetarian New Years Eve party is that it is important to make sure the guests are mindful of your intentions. This is particularly important if the event is going to be a potluck. it's also pleasantness even if you'll be preparing all of the food so that the guests know what to expect when they attend the party. Some meat-eaters are extraordinarily wary about trying new dishes, so be sure to have some staples out that everyone will love. Bread, fruit, pretzels, chips and nuts are great vegetarian options that are popular among 'main stream' dieters also.

Remember, as the host of your party, the most vital role you can play is to be certain your visitors are comfortable and having a fab time. Inspire them to get to grasp each other by helping set up new conversational partners, plan some exciting pastimes (like toasting in the New Year 'around the world' each time the clock hits a new hour), and confirm everybody driving home is fit to do so.

Preparing Great Vegetarian Soup Recipe

A great vegetarian soup recipe doesn't just tweak your appetite for the main meal; it can also simply make you feel good. Here are some great tips to come up with your own vegetarian soup recipe.

Experiment

With vegetarian soups, there are really no hard-and-fast or clear cut rules on how you should do it. You just have to follow the preliminary basics and then let your imagination rule. This means that you may just have to sauté the usual garlic, onions and your choice of vegetables, add the soup stock or vegetable broth and then add whatever you like including spices. If you are preparing a cold and raw recipe, then you can experiment by swapping some ingredients like watermelon for tomatoes or vice versa.

The only thing you might want to keep in mind is your own taste buds as well as those of whom you are preparing the meal for. It would be better though to reserve experimentation on your free days and simply use tested soup recipes on regular days when you have little time.

Be Generous with Spices

At times, a small portion of green onions, celery or carrots sauted in onions will make a big difference in taste. Other soup recipes however may need a little more than the usual herbs and spices. Try a few mixes like oregano and rosemary; pepper and lemon or pepper and lemon grass. You can also use other spices like cayenne and cumin. One tip with vegetarian soup recipe seasoning is to use an appropriate amount or mix of spices so you can cut back on salt.

Thicken the Soup

Part of the secret to savory vegetarian soup recipe includes making the texture just right. Texture may of course be improved by thickening the soup. One secret of oriental cooks is that they use flour or cornstarch to thicken a recipe instead of using milk. Some would suggest adding a precise number of parts of flour or cornstarch to water but sometimes you just have to make an estimate.

To put more texture or thickness to your soup, simply add a small amount of cornstarch. Simply mix a small amount of cornstarch with some warm water and then slowly pour the mixture while stirring in soup that is just about ready to be taken out of the fire.

Convert

Non-vegetarians usually add meat to make the soup tastier. However, vegetarians can substitute the meat with other ingredients. Aside from spices, pepper and green onions, you can also add a bit of soy sauce to give your soup some flavor. Beans can also add to the flavor of your vegetarian soup recipe and even supply much needed protein which others normally get from meat. Aside from beans, peas, lentils and squash are also tasty additions to it.

Freezing Soup

The great thing about soups is that you can prepare it ahead of time and freeze it for the next day. Just make sure that before you freeze soup, you allow it to cool completely first. Have it chilled so that you can remove excess oil before transferring it to small containers for freezing. Makes sure there is some extra space in your container after the soup has been transferred to allow the liquid to expand.

Vegetarian Jerusalem Soup

My eldest is mainly vegetarian, and we make this soup when we have chicken soup for dinner. This soup is hearty and tasty, and it really warms a family winter get-together. It is an adaptation of my grandmother's chicken soup, an old Jerusalem recipe.

Boil water in a kettle. In a cooking pan on medium heat, use 2 cups (about 500 ml) of boiling water, a very cautious few specks of allspice, a bit of cinnamon stick, a quarter teaspoon each of thyme, marjoram, and sage, 1 vegetarian broth cube, and a quarter of a cup of rice. Ideally this is pudding rice, the round sort. However, any rice will do, but please avoid the pre-cooked rice, as you want it to be thickening for the soup. If you do not have rice, pearl barley will do. Add some dried peas too if you like - about half the volume of rice in split peas. Add salt to taste.

If you make your own fresh broth, that is perfect, even better. Use this instead of water and broth cube. If you are vegetarian, you probably are a caring and sensitive person. Make sure you use organic broth cubes if possible, and read the label - beware additives like MSG and colorants. There is too much controversy about these for us to be complacent putting them into our bodies.

Raise the heat whilst stirring till the mixture boils. Reduce heat and simmer for about 45 minutes or until the rice kernels are totally open, a bit like a popped bit of corn. If mixture is too runny, let some more water evaporate.

Then sprinkle parsley all over the surface and stir into the soup.

The soup is now cooked. Shave fresh nutmeg onto it, or place in bowls and then shave nutmeg (or sprinkle nutmeg) onto the surface. Give each person half to a whole fresh lemon to squeeze onto their soup. A good substitute for lemon is lime. The soup is not complete without the lemon, so make sure you add it. Now, sit together with loved ones and enjoy!
