Pay attention to how long your soup will be cooking and how long it will need to be sitting in a crock pot while waiting to be eaten. The longer it sits in hot water, even if it's not boiling, the soggier everything will become. The thinner the starchy food is the faster it will cook. Don't be afraid to take the soup off the heat if the potatoes or noodles are still a little underdone if you know you'll be eating in twenty minutes. In that time they will be a better consistency.
Always use broth instead of bouillon cubes. Broth provides a richness to the soup you can't get any other way. The difference between a really good soup you get at the restaurant and homemade soup is usually the broth. Broth is a little more expensive but it will add the mouth watering craving you want in a soup.
Use the best fresh ingredients. Try to use the freshest ingredients you can. Canned foods don't have the same flavor as fresh foods. Canned soup is an abomination and should be avoided.
If you need to store your soup try to freeze it before it absorbs too much liquid. When you re-heat your soup don't add an extra cooking period.
