Easy Vegan Split Pea Soup

Yep, you can totally make this without ham or bacon and it still tastes very rich and creamy. It's vegan because it has no meat or dairy but if you'd like, you can substitute real butter or margarine for the Earth Balance. NOTE: When I cook, I don't really measure anything except when it comes to baking, so I tried my best to estimate approximate measurements. Just taste as you go. You might want to sift through your split peas (especially if they're from the bulk bins at the grocery stores) for pebbles or tiny rocks. Dried lentils can easily be substituted in this recipe because they cook similarly! If using pre-made soup stock, use the entire contents of the carton. If the liquid doesn't look sufficient enough, add water. Bouillon concentrates, Spike and Maggi seasonings have salt in them so make sure you taste as you go before using it with salt.
