They are both tasty, nutritious and green! Is your family more of an egg breakfast family? Well, you've heard of Green Eggs and Ham, haven't you? Make your eggs with a couple drops of the good old green, food coloring that is. Prepare them as you normally would...scrambled, fried, over easy or sunny side up. There is another green egg idea for you...the Salsa Verde Omelet. Salsa Verde is green salsa! Prepare your omelet as usual and add some Salsa Verde, it will be the best Irish Mexican Omelet you ever had! Then for the family that is in a rush...how about some green cream cheese on a bagel?

Green Lunch Ideas

Get yourself a large salad...can't get much greener than that! There is always pasta with pesto sauce for those of you who like a heavier lunch. And last, but not least, how about a bowl of Pea Soup?

Irish Dinner Ideas

The first dish on the list is not one of the green food ideas. Of course, it's Corned Beef and Cabbage with some boiled potatoes. Delicious! You can eat it as a dinner or make sandwiches on rye bread with mustard. This is also a good party menu idea. Don't really like Corned Beef? Well then get out the pasta and pesto sauce, this is good for lunch or dinner.

What About Green Party Food

Make a dip out of guacamole and Salsa Verde... all you have to do is add some chips! You can also mix the Salsa Verde with cream cheese for a delicious dip. Get out the food coloring again...you are going to need it for the green icing on your green cupcakes! If you like pistachio, add some pistachio pudding mix to your frosting and put that on your cake or cupcakes. Top them with a Shamrock pick!

Green Drink Ideas

Now you need a green drink... Limeade is sure to be green enough. It's usually found in the freezer section of your food store. Mix equal amounts of Limeaid and Ginger Ale or 7 Up in a punch bowl. Scoop some Lime Sherbet into it and your Patty's Party Punch is ready to go. Then finally, there is always green beer...which requires some greener food coloring!

Fun Chinese Recipes For Kids

Making a Chinese recipe is usually fun and easy; many of these recipes, ranging from egg rolls to wontons, have their unique but easy guidelines simple enough to accommodate the participation of the entire family. Egg rolls and wontons attract kids, as they take pleasure in having the free will to add their choice ingredients. This is usually fun for them.

You can make your usual egg roll special by allowing your family choose the ingredients that go into it; it allows anything ranging from cheddar cheese and ham to peanut butter and jelly. Rolling makes it fun, and that is what children like most. So letting the whole family sit to do this is a great avenue for bonding. Wonton is a delicious Asian appetizer or side dish that works great on a buffet, sit down meal or for dim sum.

Though quite different in terms of shape and size, wontons are practically a type egg roll. It is also fun making them; to aggrandize, a toddler can even make them as well. According to the Chinese conventional recipe, wontons contain onions, pound pork, onions, and special Chinese vegetables seasoned with certain Chinese ingredients such as cream cheese or frosting, cinnamon and sugar. If you have older kids, they can do majority of the cooking if you so wish. Chopping of vegetables, cooking rice, making stir fry and so on are those things older kids love to do.

Popular International Pizza Toppings

Pizza can be topped with whichever ingredients you happen to like. A tomato sauce covered pizza with mozzarella and oregano was once an exotic dish but would now be considered a basic pizza.

The old classics like cheese and tomato, cheese and ham and pepperoni pizza are making way for new flavors. If you look at the history of pizza, you will see that pizza was created in stages.

The First Pizza Recipes

A "pizza" used to be a piece of dough, baked to test whether the oven was hot enough to bake bread. These baked pieces of dough were sold cheaply to poor people who could not afford real bread.

After that came the toppings, and the popularity of this Italian dish spread all over the world. Tomatoes, oil and herbs were the original pizza toppings. Cheese was not added until 1889.

Fusion Flavors

In addition to all the traditional pizza toppings, new flavors are arriving. If you cannot decide between takeout Indian food or pizza, you can combine the two with a Tandoori chicken pizza. Add some extra chilies to the list of toppings and you have a delicious, spicy pizza with distinct Indian flavors.

You can get Australian pizzas with bacon and eggs, Japanese pizzas with squid, French pizzas with fresh cream and Greek pizzas with marinated lamb and feta cheese.

Almost every country has taken pizza into their hearts and adapted it with their own preferred flavors and it is now possible to buy or make a pizza with just about any toppings you can think of. Even dessert pizzas are an option, if you have a sweet tooth.

How to Make a Spicy Chinese Pizza Recipe

This delicious Chinese pizza makes a great appetizer, especially if you cut it into small squares, or a tasty entree. You can add other Asian vegetable, if you like, such as bamboo shoots, green onions or sliced shiitake mushrooms.

This pizza serves three or four people as an entree or eight as an appetizer. Serve it with fresh pineapple and an Asian cabbage salad for a true taste of China.

Easy Chinese Chili Chicken Pizza

You will need:


12 inch diameter, ready to serve pizza crust
1 tablespoon chopped, fresh cilantro
8 oz shredded mozzarella
1/3 cup sliced red onion
3/4 lb boneless, skinless chicken breast, in 1/2 inch pieces
1 tablespoon chili oil
1 teaspoon soy sauce
2 oz snow peas
8 oz can, sliced water chestnuts, drained
8 oz can tomato sauce
1 teaspoon finely chopped gingerroot
1 tablespoon chili puree with garlic

How to make it:

Preheat the oven to 375 degrees F. Heat a wok or skillet over a high heat, then add the oil, rotating the wok to coat the side. Add the gingerroot and chicken and stir fry for a couple of minutes, or until the chicken is not pink in the middle. Turn the heat down to medium and add the tomato sauce, soy sauce, and chili puree.

Spoon this mixture on to the pizza crust, keeping within 1/2 inch of the edge. Top with the onion, snow peas and water chestnuts, then sprinkle the cheese over the top. Bake the pizza for about 17 minutes or until the cheese is melted and everything is hot. Sprinkle it with cilantro and serve.

Outstanding Christmas Side Dishes

While many people have a traditional Christmas main course such as lamb or perhaps a delicious baked ham, it is those outstanding Christmas side dishes that really make the meal. And I'm going to give you a recipe that is a real stand out for every holiday season!

In that broccoli is a popular Christmas side dish I decided that I would reveal how to make my famous Broccoli Casserole. This one is a serious show stopper and one that never fails to surprise and delight my guests. And it doesn't hurt that broccoli is a health boosting mega-vegetable. If you prepare this side dish for your next holiday meal, even the kids will stand in line for seconds.

So, first for the ingredient list:

You'll need

* 4 heads fresh broccoli, chopped

* 1 1/2 cups shredded American cheese

* 1 (10.75 ounce) can condensed cream of mushroom soup

* 1 1/2 teaspoons salt

* 2 teaspoons ground black pepper

* 3 tablespoons butter

* 2 cups crushed, seasoned croutons

Now for the meat (if you will pardon the expression) of the matter, the actual preparation:

1. Preheat oven to 350 degrees F (175 degrees C).

2. Bring a pot of lightly salted water to a boil. Cook broccoli in the boiling water for 1 minute. Drain, and set aside.

3. In a saucepan over medium heat, mix the cheese, cream of mushroom soup, salt, and pepper. Stir until cheese is melted. Add the broccoli, stirring to coat. Transfer the mixture to a 9x13 inch baking dish.

4. In a separate saucepan, melt the butter over medium heat. Mix in the croutons, and sprinkle over the broccoli mixture.

5. Bake 30 minutes in the preheated oven, until the topping is browned and broccoli is tender.

As you can tell it's not a difficult meal to make. But these sort of outstanding Christmas side dishes will be certain to be a crowd pleaser for many years to come.

How to Make Two Bean Soup and Split Pea and Turkey Ham Soup (Both Are Also Perfect For Diabetics)

Soups are easy to make, they are inexpensive, and they are very nourishing. Here are a couple of recipes that are great soups and they are also perfect for diabetics. Two Bean Soup uses baby Lima beans and great northern beans together for a tasty combination. The Split-Pea and Turkey Ham Soup is a convenient slow-cooker recipe.

TWO-BEAN SOUP

1/2 lb dried baby Lima beans

1/2 lb dried great northern beans

1 (49 1/2 oz) can reduced-sodium chicken broth

1 1/2 cups cubed cooked lean ham

1 medium onion, chopped

2 celery ribs with leaves, chopped

2 medium carrots, sliced

3 garlic cloves, minced

1/8 tsp ground ginger

2 green onions, sliced, optional

Wash beans and remove any bad ones. Place in a large pot or dutch oven and add enough water to cover by 2-inches. Bring to a boil and boil for two minutes. Remove from the heat; cover and let stand one hour.

Drain beans and rinse. Return beans to pot. Add broth and ham; bring to a boil. Reduce heat; cover and simmer for one hour. Add the onion, celery, carrots, garlic, ginger and return to a boil. Reduce heat and cover pot. Simmer at least one-half hour or until beans and vegetables are tender. Place in serving bowls and top with green onions for garnish if desired.

Serves 7 Per serving: 215 calories, 31 g carbs, 10 g fiber, 19 g protein

Note: Beans are an excellent food choice for diabetics.

SPLIT PEA AND TURKEY HAM SOUP

6-oz turkey ham, cut into small cubes

1 cup raw green split peas

1 small yellow onion, diced

1 large carrot, peeled and diced

2 stalks celery, trimmed and diced

2 bay leaves

1 large garlic clove, minced

1/4 tsp crushed dried thyme

1/8 tsp black pepper

4 cups no-salt-added chicken broth

In a 5-quart slow cooker, combine all the above ingredients. Cover and cook on low for 6 hours.

4 servings of 1 1/2 cups each = 282 calories, 39 g carbs, 26 g protein

3 Most Frequently Asked Soul Food Recipes Questions For September

Soul food recipes have emerged back in the spotlight. Many observers credit the growth in popularity to the economic downturn. For example, more people are choosing or forced to eat more meals at home instead of eating out at restaurants to save money. The other opinion swings toward healthier reasons. For example, more people are choosing to cook their own meals at home more due to the high amounts of salt, butter and high amounts of fat contained in restaurant and fast food establishments.

Whatever the reason, people are cooking more meals at home again and that's making recipe sites, books and cable TV show more popular with the public. Here's the most frequently asked questions I've received for the month of September by my newsletter readers. Hopefully you'll not only find the answers helpful but the questions as well. Note: The questions were edited slightly for brevity and clarity.

1. I like the soul food recipes, but I'm concerned with the health issues. Can you suggest simple ways I can cook healthier?

Some quick suggestions for cooking healthier southern food is to adjust how you season your dishes. For example, avoid using pork products to flavor vegetables such as collard greens, black-eyed peas or beans. Instead use smoked turkey, turkey ham or turkey sausage to flavor your vegetables. They'll give your dishes that hearty robust flavor southern food is famous for without the high cholesterol risk of pork products. Also you should try to use less salt and use more natural herbs and spices instead. You may also want to try cooking with more onion, minced garlic, peppers and other fresh ingredients to add flavor and taste instead of depending on salt. If you have to use salt try sea salt, it has less harmful sodium than table salt.

Another tip is to cook with lighter oils. Instead of using animal fats or vegetable oils use lighter oils such as peanut, olive or sesame seed oils. Do more baking, roasting and grilling of meats and less frying and if you do fry do more stir-frying and less deep fat frying. Stir frying vegetables instead of boiling them will help you to preserve more of the vitamins and nutrients.

2. What's The Easiest Soul Food Desserts Recipe For A Beginning Cook?

One of the easiest desserts to make if you're a beginner is peach cobbler. If you don't want to make it from scratch you can buy the ingredients at your local supermarket. You get buy ready made crust and you can also buy the filling in your canned fruit section. This may not taste like your great grandma's but it will do in a pinch. But making it from scratch only takes a little longer, give it a try. Google "soul food peach cobbler" and give it a try.

3. What's the healthiest ways to cook chicken? I'm trying to get away from frying?

Roasting, baking or grilling are healthy alternatives. You may also want to try stir frying chicken breast strips in a light oil or cooking spray as a healthy cooking change. Also marinating will help to add flavor and moistness to the meat.

As the parent of a preschooler, you should make alphabet lessons an important part of your daily routine. Betty's Southern Living White Bean Soup Recipe

In this video, Betty demonstrates how to make her White Bean Soup, a recipe that she submitted to Southern Living Magazine in 1990 and got published. It is a hearty, filling bean soup, but quick and extremely easy! Ingredients: 1 can navy beans (approximately 16 oz.) 1 can northern white beans (approximately 16 oz.) 1 cup water 1/2 stick butter or margarine 1/4 cup chopped onion 1 carrot, chopped 1 5 oz. can tender chunk ham, flaked with a fork (I used Hormel.) Place the can of navy beans and the can of great northern beans in a medium to large pot. Add 1 cup of water and blend well. Now, take a potato masher (or fork or spoon) and mash the bean and water mixture until it is mushy. Place it over low heat on the stove top. Next melt 1/2 stick of butter in a small to medium skillet. Add 1/4 cup chopped onion and 1 chopped carrot to the melted margarine. Place the skillet on the stove top and saute until the onion is clear. Combine the sauteed onion and carrot with the bean mixture. Add a 5 oz. can of tender chunk ham. Cook over low heat for 10 minutes. Serve with Betty's Very Southern Cornbread Sticks or Cornbread. This is great on a cold day--very warm and filling!

Old World American Italian Recipes - Volume 1

This is one of a collection of recipes I have. Many came from my mother or other relatives and friends. They are real Italian recipes mostly from east coast US first and second generation American-Italians. I have put them together for a complete meal from the appetizer to the dessert. Enjoy!

The Appetizer:
PROSCIUTTO AND MELON

Ripe cantaloupe or honeydew melon, Lemon wedges, Prosciutto (smoked ham) thinly sliced

Cut melon into thin wedges and remove seeds and skin. Wrap the Prosciutto around the melon wedge or serve ham on side of melon. Serve with lemon wedge.

The Soup:
BEEF SOUP

1 ½ lb. shin beef with bone, 1 small can tomatoes, 2 whole stalks of celery, 2 large onions, 1 lb. carrots, pinch of salt, Pasta (your choice)

Boil ½ large pot of water. Put in all ingredients and put flame on medium. Let simmer for 2 - 2 ½ hours. Strain soup, setting vegetables aside and serve in a separate dish. Cook acini de pepe or Orzo. Put into beef broth.

The Bread:
ITALIAN BREAD

5 lb. flour, 3 pkg. dry yeast, 2 tbsp. salt, 1 cup sugar, 1 cup shortening, 2 cups warm water, Cinnamon, 4 cups of raisins (add after first rise)

Dissolve yeast in 2 cups warm water. Combine flour, shortening, sugar, salt, and mix well. Add yeast to mixture and keep kneading and adding water until well mixed and firm. Set aside and let rise for 2 to 3 hours in a warm place. Add Cinnamon and raisins. Separate into 5 (1 lb.) dough balls and put in individual loaf pans. Let rise again for about 2-3 hours or until dough reaches rim. Bake at 400 deg. for 45-50 minutes in preheated oven. (Dough can be frozen after it has risen twice and can be used later for pizza). Cinnamon and raisins are optional.

The Main Dish:
LINGUINE WITH MINT:

3 Tbsp. sweet butter; 2 cloves garlic crushed; ½ lb. sweet or hot Italian sausage; 1 cup of fresh mint chopped; Oregano; Salt; ½ cup of dry white wine; 1lb Linguine.

1. In a medium skillet melt the butter. Add the crushed garlic and sauté until golden. Remove the sausage meat from the skins crumble and place in the skillet; Saute until the meat is brown; Remove the garlic, add the wine, the mint, the oregano and mix well. Cover and let simmer for 7 minutes.

2. Turn off the flame and let stand. Cook the Linguine. Enjoy your Linguine with Mint. Serves 4-6.

The Dessert:
FRUIT IN A WHEEL

½ cup sugar, fruit cocktail, ½ cup milk, 2 Tbsp. corn starch, 1 Tbsp. lemon rind, 2 cups Bisquick.

Mix together 2 cups Bisquick and ¼ cup sugar. Add ½ cup milk and mix lightly. Turn out in lightly floured board and knead gently for 10 seconds or so. Roll into a rectangle (9x12 inch). Drain fruit cocktail and reserve syrup. Spread fruit over dough and roll up. Cut roll into 1 inch slices and place cut side down in a greased 9x9 baking pan. Bake at 425 degrees for 15 minutes.

Add water to fruit syrup to 1 cup. Add sugar mixture stirring constantly. Continue stirring and cook over low heat for about 5 minutes or until thickened. Pour fruit glaze over rolls and bake an additional 15 minutes. - Mama Mia!
